Elevate Your Plate with the Ultimate Salad Delight!

So, this past week I posted a picture of a salad I had made for lunch one day. I have to say I was surprised by the amount of attention this salad had gotten, so I thought I would share it here for those who might want to give it a try.  

I was pleasantly surprised by this salad as there are a few items that I would not eat individually (onions, parsley, avocado) but together in this salad it works great and now I get the added health benefit from each of the items.

Did you know…

Red Onions are a powerhouse for quercetin, can improve cardiovascular health and it supports your immune and liver health.

Parsley is a great source of Vitamin A, C and K. It’s rich in antioxidants which prevent cellular damage and important for woman…it supports bone health.

Avocados are high in potassium which apparently, we don’t seem to consume enough of. It is great for a healthy immune system with vitamin C, B6 and E. Also, avocados are a great source of healthy fats and fiber.

Mediterranean Salad

Here is the recipe...


1 Bag of Persian Cucumbers (the small ones)             

1 red onion

3 multicolored bell peppers

1 head of parsley

2 avocados  

2 cans of rinsed and drained chickpeas (also known as garbanzo beans)

Grab a LARGE bowl and dice the above ingredients up. Make sure to chop the parsley into smaller bits. 

1/2 cup of olive oil
2 lemons juiced.
1/4 cup of balsamic vinegar
1 tbs oregano
1 tbs cumin
1 tbs sea salt
A big pinch of red pepper flakes 

Combine all the Dressing ingredients, shake well and pour over entire salad.

This salad will keep (in an airtight container) in your fridge for about a week. It’s a great thing to make on a Sunday and have ready for lunches throughout the week or you can use it as a side with protein for dinner on a busy evening. 

Don’t forget eating healthy is only one part of living a healthy lifestyle, it also encompasses a holistic approach to health, including regular physical activity, social connections, and a positive mindset.
